Tomato & Red Onion Stuffed Avocado

A fun and easy appetizer using ripe Haas avocado. Half and pit avocado, squirt fresh lemon juice over both halves. In a mixing bowl add 2 Roma tomatoes diced, 1/4 red onion sliced thinly, add a dash of olive oil and red wine vinegar, s & p, to taste, mix well, fill inside of each avocado. Chill and serve. I usually make at least 12 halves. Depending on how many you will serve, judge accordingly.

Tortilla Party Wrap~Mini Sandwiches

This is such a crowd pleaser. From a family or friend’s Birthday party to almost any function. I usually fill the wrap tortillas with Deli Ham or Smoked Turkey, Cheese, Lettuce-Tomato-mayo-mustard. Cut them into thirds and plate. (Roll up filled tortillas tightly then cut into thirds).

Refrigerate until ready to serve they are so much fun to eat

Baked Jumbo Shrimp (with Almond-Nut Crumb Coating)

These jumbo Shrimp appetizers are so easy and delicious and a favorite. I use one pound (16 ounces) deveined fresh shrimp with tails on (from my Seafood Market). 1/2 cup crushed almonds. Served with a cocktail sauce on the side.

On a plate add crushed almonds and coat each Jumbo Shrimp well, place on a rimmed non stick baking sheet pan and place into a 425 F hot oven. They do not take long to bake about 6 minutes. Once the almonds begin turning brown remove from oven. Serve with sauce and a side of fresh veggies. A perfect appetizer year round.
