Tomato & Red Onion Stuffed Avocado

win_20160928_00_01_54_pro-2

A fun and easy appetizer using ripe Haas avocado. Half and pit avocado, squirt fresh lemon juice over both halves. In a mixing bowl add 2 Roma tomatoes diced, 1/4 red onion sliced thinly, add a dash of olive oil and red wine vinegar, s & p, to taste, mix well, fill inside of each avocado. Chill and serve. I usually make at least 12 halves. Depending on how many you will serve, judge accordingly.

Enjoy them!

Baked Jumbo Shrimp (with Almond-Nut Crumb Coating)

win_20160320_22_30_27_pro-4win_20160320_22_30_27_pro-4

These jumbo Shrimp appetizers are so easy and delicious and a favorite. I use one pound (16 ounces) deveined fresh shrimp with tails on (from my Seafood Market). 1/2 cup crushed almonds. Served with a cocktail sauce on the side.

On a plate add crushed almonds and coat each Jumbo Shrimp well, place on a rimmed non stick baking sheet pan and place into a 425 F hot oven. They do not take long to bake about 6 minutes. Once the almonds begin turning brown remove from oven. Serve with sauce and a side of fresh veggies. A perfect appetizer year round.

Hope you enjoy them as much as we do.

Lemon~Garlic Pickles

win_20161106_13_27_06_pro-2

Pickles are a great condiment to any appetizer. These are so quick to make they are ready in under two hours. The flavors are so delicious. I cut 2 English cucumbers thin, sliced finely one small onion, use white peppercorns, 1 cup vinegar, 1 cup water, 1 tablespoon iodized salt, one lemon (juice only), two cloves of garlic sliced thin.

In a saucepan add vinegar and water, salt, peppercorns, garlic, lemon juice on medium heat, stir to combine pickling juices. In two mason jars (with lids) add cucumbers and onions, add pickling juices. Set on the counter to cool. Then refrigerate 1-2 hours.

Serve in small bowls and enjoy the flavors. Yum-o!

What’s a party without wings? Whether for game night with the family or friends these are sure to please.

I use a Honey BBQ sauce from the local grocery store, (use your favorite brand/type) soak all wings in a large bowl with the sauce. Prepare a rimmed non stick baking sheet pan, add the wings pop into a 400 F hot oven and bake 30-35 minutes.

Add sour cream and some celery sticks!

Enjoy.
