A fun and easy appetizer using ripe Haas avocado. Half and pit avocado, squirt fresh lemon juice over both halves. In a mixing bowl add 2 Roma tomatoes diced, 1/4 red onion sliced thinly, add a dash of olive oil and red wine vinegar, s & p, to taste, mix well, fill inside of each avocado. Chill and serve. I usually make at least 12 halves. Depending on how many you will serve, judge accordingly.
