Pickles are a great condiment to any appetizer. These are so quick to make they are ready in under two hours. The flavors are so delicious. I cut 2 English cucumbers thin, sliced finely one small onion, use white peppercorns, 1 cup vinegar, 1 cup water, 1 tablespoon iodized salt, one lemon (juice only), two cloves of garlic sliced thin.
In a saucepan add vinegar and water, salt, peppercorns, garlic, lemon juice on medium heat, stir to combine pickling juices. In two mason jars (with lids) add cucumbers and onions, add pickling juices. Set on the counter to cool. Then refrigerate 1-2 hours.
Serve in small bowls and enjoy the flavors. Yum-o!
